- 1 Halibut steak, cut into four pieces without the bone
- ~ 1 1/2 tbs soft butter or margarine
- lemon zest from one lemon
- juice of 1/4 a lemon
- ~ 1 1/2 tbs chopped fresh basil (or herb of your choice)
- 1 garlic clove pressed
- 1 blade of green onion, chopped (or shallot diced fine)
- Pinch of Kosher salt
- ground pepper
- 2 tbs olive oil
Steps
- To butter add lemon zest, lemon juice, basil, garlic, and green onion. Mix wel.
- Season Halibut with olive oil, salt and pepper
- Place Halibut in a hot pan face down and sear for about 3 minutes on each side (or broil halibut for a few minutes like we did)
- plate fish and top with the butter mixture
- Let butter melt on top of fish and serve
We served the fish with asparagus (oven roasted with olive oil and salt and pepper) and a quinoa side dish. For the quinoa dish, we added cherry tomatoes, red bell pepper, fresh basil, balsalmic vinaigrette, parmesan cheese, salt, and pepper to the quinoa. -Vanessa
ReplyDeleteThis dinner ended up great! I bought the ingredients on sale at an asian food mart (Ranch 99 - very asiany name). There was no real recipe picked out beforehand. I had intended to make up pasta dish when picking out the ingredients, but the closest thing I could find to pasta at Ranch 99 was chow mein noodles. Luckily, Vanessa came up with the quinoa idea and potentially saved us from an experimental downfall. I think V's quinoa creation was the best dish!
